Remarks: E. C. Rich was a purveyor of gelatins, fancy foods, and candied fruits that became known for its fine “glacéed fruits.” Established as an importer of Chinese crystalized ginger, by the early 1940s the firm traded 80% of the crystalized ginger sold in the United States. E. C. Rich was also the innovator of a unique sugaring process that tenderized exotic and local fruits. After Pearl Harbor and the United States entry into World War II, the firm increased its fruit business over that of imported ginger.
